During this presentation, we will dive deep into the roots and origin of Cacao, its influences and wisdom. A brief overview of the botany, varieties, and medical values of Cacao. Then, focusing on Mexico’s history, folklore and traditions, as well as its involvement with chocolate production on a global scale. Together, we will learn more about and appreciate one of the most beloved plants on the planet: Cacao!

Presenter: A California native, Heidi Walker is the chocolatier and owner of “Chocolates of Eden.” With an educational background in Ayurveda, her chocolates are inspired and infused with these ancient herbs, spices, and superfoods. As a way of connecting deeper with cacao, she is currently residing in Huayapam, to explore the roots and wisdom in its place of origin—here in Oaxaca!
